Granite and an undermount sink?

I have a relatively unusual under-mount sink that I want as part of my bathroom. When I buy the granite and the "cut" it, do they need to know the dimensions of the sink so it can fit nicely? Or is granite "cut" for a standard sink? I guess my question is basically how does the shape of the sink effect the granite that you will use.
